Cakey Brownies

I don’t have much of a story to tell about brownies. I love them, but I don’t bake it often. Why? Because we always end up with more than what we can consume. Don’t you hate that?

Especially now that we are in quarantine and flour is sold out everywhere! Luckily for me, I buy flour 20 pounds at a time, so I’m being extra mindful of how much I use these days. You never know how long we’ll have to self-isolate!

I used Hummingbird High’s recipe for her Small Batch Brownies as a guide. I say guide because I’m terrible at following directions and I like to add a little more of this or a little more of that. Hence, the cake-like texture of these brownies. If you want fudge ones, follow her recipe! 🙂

Cakey Brownies

INGREDIENTS (8 squares) – recipe adapted from Hummingbird High

  • 6 tbsp unsalted butter – cubed
  • 3 oz 60% chocolate (if you’re using baking bars, cut them up into smaller pieces)
  • 2 tbsp granulated sugar
  • 1/4 cup brown sugar
  • 1/4 flour
  • 2 tsp vanilla extract
  • 1 tsp salt
  • 1 egg
  • 2 tsp unsweetened cocoa powder (not the drinking kind…)

PREPARATION

  • Preheat oven or toaster oven to 350°F. I used my Breville smart oven cuz this is such a small batch, there’s no need to waste electricity…
  • If you have a nonstick loaf pan or a small square pan, use that. Spray it with cooking spray and line it with parchment paper. Spray that too so it’s much easier to get these out.
  • In a small sauce pan on very low heat, melt butter, chocolate, and cocoa powder. Want to do this carefully and slowly so you don’t scorch the chocolate. Once melted and all is mixed well, turn off heat and set it aside.
  • In a small bowl, add your sugars, egg, vanilla, and salt. Mix and add the melted chocolate slowly.
  • Add flour and use a spatula to fold it in until flour disappears. I don’t know if folding makes a difference, but that’s how I did it.
  • Pour batter in prepared pan.
  • I added chocolate chips and sliced almonds to the top, but add whatever you want! I like mine with nuts and wished I had walnuts instead of almonds. Still good though!
  • Bake for 22 minutes and allow it to rest or not… eat it straight from the pan or cut it into 8 pieces…
