Blogging is not easy. Cooking is easier. It’s a little exhausting to tell stories associated with food without being impersonal and rigid. With that said, I’ve spent hours trying to figure out what to say about this recipe of Swedish Meatballs. You can’t have the meatballs without the gravy. You can’t have the gravy without the mashed potatoes. And you can’t have any of those without lingonberry jam. It’s an experience on a plate.
In 2017, we tried out Sun Basket and chose a version of this. It didn’t disappoint. Naturally, I made some tweaks to give it more flavor and used chicken instead of beef. My version only serves two, but it might be because we eat a lot… Obviously, you can figure out how many meatballs in a serving or double/triple the recipe if you’re feeding more than two people.
I actually make these as part of our weekly meal preps because they will keep and it’s super easy to warm up after a long day of work.

SWEDISH MEATBALLS (kind of)
INGREDIENTS (serves 2, cook time 25 – 30 minutes) – recipe adapted from Sun Basket
- 1 lb ground chicken (or your choice of beef, pork, turkey)
- 1/8 tsp nutmeg
- 1/8 tsp all spice
- 1/2 tsp salt
- 1/2 tsp ground black pepper
- 1 tsp minced garlic
- 1 egg
- 2 tbsp chopped cilantro (or whatever herb you like)
- 1/3 cup panko
PREPARATION
- Combine all ingredients in a bowl.
- Roll ’em up into bite-sized balls.
- You can either bake these for 25 – 30 minutes at 350°F OR fry them up in a skillet. I like my meatballs with a little crunch, so I choose the skillet option.
- Remove from the skillet and use the same pan for your gravy.
GRAVY
INGREDIENTS (serves 4, cook time 20 minutes) – recipe adapted from Sun Basket
- 2 tbsp organic whole milk plain Greek yogurt
- 1 cup chicken stock
- 2.5 tbsp unsalted butter
- 2 tbsp all purpose flour
- 1/2 tsp ground black pepper
- salt for taste
PREPARATION
- In a sauce pan or medium sized pot, melt butter and flour. Use whisk to make sure it’s smooth and fully incorporated.
- Slowly and gradually add chicken stock, while whisking constantly. Add yogurt and spices. Continue to whisk away until it’s to your desired thickness.
- Remember, you can always add more stock if it’s too thick.
- Serve over mashed potatoes, meatballs, and lingonberry jam.
I’m not going to give you guys a recipe for mashed potatoes since you’re already getting another twofer! Don’t get used to this.
