Buttermilk Honey Biscuits

It’s the first weekend of Fall and I am so excited for it since it’s my favorite season! OK, so California doesn’t really experience it until late October, but it won’t stop me from making one of my go-to comfort foods.

I host a few Thanksgiving feasts every year, and every time, I make my buttermilk honey biscuits. My brother-in-law loves them and my husband just told me last night that he always asks if I’ll be making them. Well, I’ll do you one better and share with you my recipe that I’ve developed and think I’ve perfected by now.


BUTTERMILK HONEY BISCUITS

INGREDIENTS (makes 12-15 depending on how big you cut them, cook time 30-35 minutes)

  • 3 cups all purpose flour
  • 1 tsp salt
  • 2 tbsp baking powder
  • 1 1/2 tbsp granulated honey
  • 3/4 cup buttermilk
  • 2 sticks cold butter (grated – trust, this will make your life easier)

PREPARATION

  1. Heat oven to 350°F.
  2. Combine flour, salt, baking powder, honey, and grated butter into a large mixing bowl.
  3. Mix dry ingredients and carefully work the butter into the flour. You don’t want large blobs of butter, but you also don’t want to work the butter too much that it starts to warm up. That’s a no-no. If you have a pastry blender, use one of those, but I normally use my hands. You just have to work quickly.
  4. Pour buttermilk 1/3 at a time and mix by hand. You’ll be able to tell if your dough is too wet at which point you’ll need to add a little bit of flour.
  5. On a lightly floured surface, place your dough and knead at least 5 times.
  6. Create a mound and roll it out with your rolling pin to about an inch thick.
  7. Cut with biscuit cutter and place into a baking dish. Don’t throw out your scraps. Put them back together, roll it out, and cut more biscuits!
  8. Lightly brush the tops of your dough with buttermilk and pop it in the oven until they’re a slight golden brown on top.
  9. Best to serve them warm, but they’re good any time.

A few nights ago, my husband and I were chatting before we went to sleep. He told me during our early dating years, he was so broke he would buy 6 biscuits from KFC because that’s all he could afford to eat before he had to go to work. I asked him why he never told me so I could at least make him some food whenever he would come over. He said he was embarrassed. Boy, my heart broke a little. I always wondered why he often bought a box of KFC biscuits and ate them like there was no tomorrow. I really thought he liked them that much.

Well, baby, I’ll make you biscuits any day. And sausage gravy to top it off.
