Thought I’d give this a try and see where it goes. Happy Endings Bakeshop was a passion project of mine for so long and lately, I’ve been getting the itch to work on it again. While I haven’t figured out if I’m going to reopen my online bakery, I might as well share my adventures in the kitchen with all of you!

Hold on to your seats because this is going to be a bumpy ride. I mean it. Probably won’t be pretty and hell, I might just stick to cooking and baking if this blogging thing is a disaster.

Don’t expect any fancy, VSCO’d filter pictures here. I take them with my phone and don’t have much patience to edit anything because I’d rather eat… (insert shoulder shrug emoji).

So…for today…I present to you this basic ass Dutch Baby that’s guaranteed to put a smile on your face and glad you actually read this…


DUTCH BABY

INGREDIENTS (serves 4, cook time 25-30 minutes) – recipe adapted from Tasty

  • 3 large eggs
  • 1 tsp granulated sugar
  • 3/4 cup warm milk
  • 3 tsp vanilla extract
  • 3/4 cup all purpose flour
  • 1 tbsp melted butter
  • 2 tbsp of butter
  • berries for topping
  • whipped cream
  • powdered sugar for dusting

PREPARATION

  1. Preheat oven to 400°F
  2. In a blender, combine eggs, sugar, milk, vanilla, flour, and melted butter until nice and smooth.
  3. Take a skillet (cast iron preferably, but not a deal breaker if you don’t have one) and melt remaining butter on stovetop.
  4. Pour mixture into skillet and carefully place it into your oven.
  5. Once the sides have risen and has a light golden color, remove.
  6. Place back onto stove top to ensure the bottom has a nice crust. This should only be about 2 minutes. You’re not looking for crispy, but you want to make sure the bottom isn’t soggy.
  7. Top with berries, whipped cream, and dust with powdered sugar.

This was actually my first time making this and I’d have to say that it turned out pretty well. One thing to note is that the heat distribution in your oven might be uneven, so if you notice one side not rising as much, just turn your skillet around.

Also, I don’t add a lot of sugar to my baked goods these days just because I’m on a modified sugar detox. The powdered sugar gave it enough of that sweetness, without it being overbearing. Making your own whipped cream is another way to skip the extra sugar. Just saying.

My husband actually ate his like a slice of pizza, so if you wanted to be really hands-on with this meal, this is one way to do it.
